Why the walk-out is invisible
A customer who leaves without signing in generates no record. Your paper list only captures the customers who stayed. The ones who looked at a full lobby and left before speaking to anyone are counted as if they never came. The walk-out rate above — roughly 1 in 5 customers — is almost certainly present in your shop right now. You just have no way to measure it until you have a system that logs arrivals separately from completions.
